Collard Green & Beef Egg Rolls







I came up with a pretty easy recipe for egg rolls stuffed with collard greens, carrots, zucchini, and lean beef. Aside from the quick dip in oil at the end, these are quite healthy and delicious. 

Start by cutting all of the vegetables and the beef into thin strips. Then toss everything into a frying pan and cook it in water until the veggies are al dente. 








Brush the corner of the wraps with egg. Fold the veggies and beef into the wrap. 















In a small bowl, mix together 2 teaspoons of cornstarch and 4 teaspoons of water. Bring the vinegar mixture to a boil, then add the cornstarch mixture to thicken. Add 1/8 teaspoon of sugar. It's ready for dipping! 

Now heat your oil in a pan and fry away!
